This simple lunchbox quesadilla has solved my lunchbox problems 🙌. My kids preschool is entirely nut free. This makes my life exponentially more difficult. Why? Because apparently I’m weird (I call it unique) and don’t cook like most other people according to my friends and family.
You see, ever since my vegan and gluten free days many years ago, my cooking style changed entirely. We will call it a total shift in my lifestyle and it is now the norm in our house since I do almost all the cooking and shopping.
While I’m no longer vegan or exclusively eat gluten free foods, I do try to limit the amount of animal products that I bring into the house and I’m conscientious of where they are sourced. So, moral of the story: many of my ingredients are nuts. Many, many nuts. Our milk we use is almond milk. Our yogurt is made from almonds. Almost all the flours I use are paleo centric – almond meal, cashews, coconut, etc. One way or another I find something I’ve made likely has a nut in it.
I’ve had to adapt some of my normal lunch box foods for the kids since leftovers aren’t much of an option. Bring in this simple quesadilla. Whole wheat tortilla, garlic hummus, shredded cheese, and hemp hearts. It’s delicious, easy to make, and picky little kids love it.
You can add whatever you like into your quesadilla but I’ve found the simpler the better when feeding little ones.
How To Build Your Quesadilla
Take a whole wheat tortilla and smother it in hummus.
Sprinkle on the hemp hearts.
Sprinkle on your desired amount of cheese.
Fold in half and cook on medium high heat until browned on both sides and cheese is melted inside. We have tried many non-stick skillets and these All Clad Fry Pans are hands down our favorite.
Let cool for several minutes before slicing.
Slice and serve with your favorite toppings like salsa 🍅 or guacamole 🥑. Or place in your child’s lunchbox for them to devour at school!
Simple Lunchbox Quesadilla
- 1 Whole Wheat Tortilla
- 1.5 tbsp Garlic Hummus – Or Hummus of Choice
- 2 tbsp Shredded Cheddar Cheese – Or Cheese of Choice
- 1 tbsp Hemp Hearts
- Heat a large skillet on medium heat.
- Smooth hummus over entire tortilla. Sprinkle on hemp hearts and cheddar cheese.
- Place tortilla into skillet. Fold it in half. Cook until cheese is melted and outside of tortilla is crispy.
- Let cool for five minutes. Slice and serve or place in lunchboxes.
What I’m aiming for in this school lunch is fast, simple, and nutritious since I have yet to master the art of packing lunches the night before 🤦🏼♀️. I rarely make it on time to preschool at 0900 every week. One day I’ll grow up and get my act together but until then I will resume scrambling to make lunches before we leave for preschool everyday like a very tardy boss 💃
